Beef Cut Sheet Options

We are a USDA-inspected beef processing facility in Cortez, Colorado, serving ranchers across the Four Corners. When you book processing with us, you fill out a cut sheet that tells our butchers how you want your animal broken down. Everything below is an option on that form, grouped the same way you will see it when you book. If you have not filled one out before, or you want to think it through ahead of your drop-off date, this is a good place to start.

Before you choose

A few of these are either/or decisions, because the same muscle cannot be cut two ways. You pick rib steaks or a rib roast, and top sirloin steaks or a top sirloin roast. Grind for Burger shows up under both Chuck and Top Sirloin, so the more primals you send to grind, the more ground beef you take home and the fewer whole cuts.
